Summer Picnic Ideas, Mini Quiches

With the Summer holidays fast approaching, here at Crafty Cooks Northampton we are ooking forward to those lazy hazy crazy days of Summer with picnics featuring in our plans on most days.
But unlike the picnics of the past with uninspiring ham and salad sandwiches, we love these Mini Quiches. They are perfect for picnics, and very easy for children to make.
Makes 6 quiches
2 oz/50g plain flour
2fl oz milk
Fillings of your choice (pepper, ham, cheese, tomato)
1: Rub together the butter and flour until it resembles breadcrumbs.. Add a few tsp of water and combine until you have a nice ball of pastry.
2:Roll out the pastry very thinly on a floured surface. (The thinner the pastry the more fillings you can get in)
3:Cut out circles from your pastry.
4:Using some extra butter, grease your baking tin, and then sprinkle on a little flour.
5:Fill the cases halfway with fillings. Stir the egg and milk together and fill the cases to the top.
6:Cook for 12 – 15 minutes on 2200C, 3500F or Gas Mark 7
Other good ideas for picnic food are sweet potato scones, pizza chunks and savoury muffins. These are all recipes that we cook in our classes and can be made by a 3 year old with minimal input from their grownup!
